After the Russe and the Babka praliné, Philippe Conticini, a French emblematic figure in the pastry world, and the young Chef Jeffrey Cagnes have come together for a new creation that is just as gourmet.
During the 17th edition of the Omnivore culinary festival, which will take place from September 10 to 12 at the Parc Floral in Paris, the two chefs will present their new creation: Le Nid Exotique.
On this occasion, you will have the unique opportunity to taste and savor this exclusive creation full of freshness from the two pastry chefs.
Le Nid Exotique cake will give you a boost this fall, with its flavors combining ginger, kumquat and lemon.
We find here a reconstituted shortbread with slightly spicy notes of ginger and lemon. It is mounted with a soft and silky Kumquat creamy with candied pieces of Kumquat and lemon. The cream is then poached all around by a light and airy Madagascar vanilla ganache, delicately flavored with lemon, which gives the whole the shape of a pretty nest.
As a finishing touch, a few cubes of honey and ginger jelly and a few mint leaves are placed on top of the creation, inviting us to a tasty escape.
