Ladurée - Cake Le Divin

Famous French patisserie Ladurée is celebrating its 160th anniversary this year. Opportunity for Chef Julien Alvarez to delve into the House’s archives and revisit its great classics. This month, it is the cake Le Divin that is honored.

The Divine, decidedly gourmand, combines the nougat of Montélimar with the freshness and acidity of raspberry.
It is composed of a generous dacquoise cookie with a lot of texture and dried fruits (pistachios, hazelnuts, raw roasted almonds) and a nougat insert.
The Divine is decorated with a nougat chantilly, fresh raspberries topped with a raspberry confit, grated pistachio and a dried fruit mendiant.

I wanted to keep the association of nougat and raspberry while accentuating the greediness of the original recipe with notably the flowing nougat heart and the dried fruit slivers in the cookie“, said Chef Julien Alvarez.
