Epiphany 2023 – La Maison du Chocolat’s King cake plays on contrasting tastes and freshness

What if you went to the sun in the middle of January? The pastry chef of La Maison du Chocolat Nicolas Cloiseau has understood our lack of the sun’s warm caresses on our skin and for this reason, he has reserved a place in the sun for us with his galette des rois (king cake) full of freshness and generosity for the Epiphany 2023.

In the tradition of the house, Nicolas Cloiseau’s galette des rois is of course filled with full-bodied dark chocolate (80%). The star ingredient is mixed here, in ganache, with a melting hazelnut cream zested with candied yellow lemon. In contrast, a caramelized puff pastry envelops this gourmet heart. Roasted hazelnuts from Italy, pearls of yellow lemon juice and a supple dark ganache (56%), surrounded by a fine chocolate crown (56%), crown this galette with striking contrasts.
