Anne and Thomas Cabrol’s La Villa Pinewood earns its first star in the 2023 Michelin Guide

La Villa Pinewood, a unique restaurant located in the heart of Tarn, a department in the Occitania region in Southern France, has been awarded its first Michelin Guide star.

Born in 2020, the restaurant is the result of the long-standing work of two wine enthusiasts, Anne and Thomas Cabrol, who were searching for their roots. Despite having no prior experience in the culinary arts, the couple’s self-taught skills and complementary strengths have led to their success in the world of œnogastronomy (food and wine).

Thomas and Anne Cabrol left their successful careers in Toulouse, where they owned the N5 Wine Bar, to start anew in Payrin-Augmontel, a small village in southern Tarn. La Villa Pinewood opened its doors in June of 2020, offering three guest rooms and a 14-seat table, where Thomas and Anne cooked in front of the guests using only local products with a few exceptions.

The menu at La Villa Pinewood is a unique and complete experience (priced at 120 €) – a vegetable menu is also offered at 89 € – offering a fifteen-course partition inspired by nature and the Tarn region. Thomas Cabrol’s flagship dish, the “vegetable carpet with 24 flavors,” is a broth of umbellifers that embodies the art of wild picking and incorporates over 150 surrounding plants, flowers, fruits, and vegetables. The menu is cooked to the rhythm of seasonal products and offered with wine pairings ranging from 50 to 95 euros.

The Michelin Guide honors us with a red star and a green star for our oeno-gastronomic table. We are proud to restore this long-lost red star to Tarn and its very first green star (sustainable gastronomy),” said the restaurateur. Thomas Cabrol’s cuisine is meticulous, precise, and flavorful, and is primarily sustainable and in total symbiosis with the environment.

Anne and Thomas Cabrol’s journey to La Villa Pinewood may have started as a slightly crazy project, but it has now become a reality that is not only a source of pride for the couple but also for the Tarn region. The Michelin star is a testament to their hard work and dedication to creating a unique oeno-gastronomic experience that celebrates the local heritage and the natural beauty of Tarn.
