A Christmas dinner without candles is bound to be a fiasco! Pastry chef Laurent Duchêne, Meilleur Ouvrier de France, has this thought in mind when he imagines his Christmas log. Thus, he and his team were inspired by the Advent wreath to create this “Noël aux bougies” (“Dinner Christmas with candles”) log.
Deliciousness and sharing are the keys to this Christmas log which is composed of five candles of different sizes. The candles are composed of a rolled cookie that dresses a white chocolate and vanilla Chantilly, a lime cream and a lightly salted flowing caramel. The whole is covered with a white chocolate glaze.
The candles are decorated with chocolate flames and are placed on a crown made of gianduja crunch. An almond sponge cake symbolizes the thorns of the fir tree and brings a vegetal touch to the composition.
A little extra: the log is a creation without alcohol and wheat flour to satisfy the most demanding gourmets.
