Maison Ladurée invites us to discover summer fruits, with its two new creations: Le Bayadère & Le Pompadour which promise us true moments of gourmandise.
Each month, Chef Julien Alvarez and his team revisit a classic of Ladurée in a limited edition. During the two months of July and August, they propose to rediscover Le Bayadère & Le Pompadour, two great classics that celebrate the House’s know-how.
Le Bayadère
Le Bayadère is made of Duja amande (crunchy almond feuillantine, made with homemade almond paste) and an almond mirliton cookie.
It is filled with a flowing almond orgeat heart, an apricot compote and almond orgeat ganache and surrounded by a chocolate Opalys almond belt. Finally, it is delicately decorated with an almond orgeat ganache and an almond skin in syrup.
“The intention in this dessert is to work with raw, unroasted almonds to obtain fresh, vegetal and floral notes of almond milk. Gustatively, a parallel can be made with our 160 year old macaroon on the work of the almond. The slightly acid apricot compote with its hint of yuzu juice reinforces the fruity side and marries perfectly with the almond,” explains Chef Julien Alvarez.

Le Pompadour
A very fresh dessert, delicately fruity, with nuances around exotic fruits.
The light coconut cream and lime zests bring the bonding and the greediness between the crispness of the meringue and the heart of fresh mango. To accentuate the floral and acidulous side, the mango is associated with pineapple and passion fruit. A real exotic delight A real exotic delight, with a marshmallow flower and a touch of gold leaf on top.
