Métayer’s latest pastries, to be featured at Watches and Wonders 2023 and served in 1931 Café locations worldwide, pay tribute to the Golden Ratio’s harmony. Inspired by the Reverso watch design from 1931, Métayer’s creations emphasize proportions, shape, symmetry, and color. Each dessert, named Spirale de Noisette, Ellipse de Sapin, Étoile de Cassis, and Carré au Miel de Forêt, incorporates ingredients from the Vallée de Joux. These flavors, including hazelnuts, honey, pine, chestnuts, and blackcurrants, reflect the natural beauty surrounding Jaeger-LeCoultre’s Swiss Jura mountains home.
Nina Métayer explains her approach, stating, “Harmony in everything is, and has always been, a blend of mathematics and poetry.
