This holiday season, the two-starred Chef Christophe Cussac and his Pastry Chef Patrick Mesiano of the Hôtel Métropole Monte-Carlo take us on a trip down memory lane with their exceptionally flavored Christmas log: the “Cazette” log.
As gourmet as it is aesthetic, the “Cazette” log highlights a concept particularly dear to Chef Christophe Cussac, that of travel. Of all the travels, in time, we dive into our unforgettable memories of childhood, in space, but also in taste, with its different materials and textures.
The log is composed of a crunchy praline and sparkling orange peels that sublimate a cookie “Cazette”, from a delicate roasting of hazelnut. The whole is covered with a layer of chocolate, decorated with rings that make us think of a spiral notebook in which are recorded our most beautiful memories or the wrists of luggage, excellent and faithful companions of your travels. On each ring hangs a golden label stamped with the emblem of the 5-star luxury hotel, one of the jewels of the Monegasque hotel industry, located in the Carré d’Or, a stone’s throw from the Principality’s famous Casino.
