With the creativity and know-how of our pastry chefs, Christmas logs these days have become true pastry masterpieces, like this cinnamon stick log by Jordan Gasco, Pastry Chef at the luxury hotel Relais et Châteaux Le Chambard, in Kaysersberg, a charming village near Colmar.
Named “Pastry Chef of the Year 2022” by the professional magazine Le Chef, the young Chef Jordan Gasco, born at Avignon and who trained with Chef Olivier Nasti, a two-starred Michelin chef, has imagined a Christmas log in the shape of cinnamon sticks, honoring the emblematic spice of the Christmas season. Passionate about drawing and architecture, Jordan Gasco put his drawing skills to work on this log.
Composed of a bundle of cinnamon, Christmas spices, a soft berawecka cookie, crispy almond praline, citrus confit and a cinnamon mousse, the warm and sweet log is sure to find its place on your holiday table, delighting both your eyes and your taste buds of gourmands.
