Three Christmas logs on your holiday table, and not just any Christmas log. They are signed by the 2021 Michelin Guide-winning Pastry Chef Anne Coruble for the 5-star hotel The Peninsula Paris, and your holiday meals are in for a treat.
This year, the young chef, newly appointed pastry chef at the luxury establishment on Avenue Kléber earlier this year, has reinvented the signature desserts of L’Oiseau Blanc in the form of three logs with complementary universes: yogurt-fennel, vanilla-tobacco and truffle-hazelnut.
Christmas log Yogurt-Fennel
The first log, yogurt-fennel, was inspired by one of the first desserts presented by the chef in the fall of 2020: Yogurt, Blackcurrant and Fennel Freshness. The log combines the creaminess of mountain yogurt and the freshness of fennel and candied lemon with a blackcurrant and fir bud vinegar compote. The whole thing is mounted on a tasty soft lemon cookie with pine and a raw milk crisp.
Christmas log Vanilla-Tabac
The second log is a true ode to Tahitian vanilla, paying homage to the chef’s signature Vanilla-Tabac dessert, awarded this year’s Lebey prize for best dessert. This log features a toasted vanilla and tobacco mousse, revealing a soft muscovado, rapadura and tobacco cookie at its heart, a creamy vanilla caviar on a licorice and candied lemon molasses and a vanilla cream, all on a vanilla and black cardamom crunch.
Christmas log Truffle-Hazelnut
And finally, Anne Coruble has chosen a daring marriage of truffle and hazelnut for her third and final log. A concentrated raw milk cream with black truffle reveals in its heart a comforting praline with roasted hazelnut (cazette) and truffle, as well as a regressive hazelnut cookie, itself coated with a creamy black truffle and cazette, all set on a smoked black truffle crisp.
