Long before it graced our tables as a delicious dessert, the Yule log was a Christmas Eve custom. Families would burn a large log to symbolise warmth and togetherness during the festive meal. Inspired by this tradition and the majestic oak trees of Château de Berne, Chef Raynal has created a Yule log that pays homage to history.
His 2023 Yule Log is an exquisite combination of flavours and textures. Wrapped in a crunchy chocolate and cocoa nib shell, it resembles the rough bark of an oak tree. This outer layer gives way to a luscious milk chocolate and passion fruit mousse that perfectly balances the richness of chocolate with the tangy freshness of passion fruit.
