Nestled within the majestic walls of the Château de Versailles, Le Grand Contrôle is a sight to behold. Completely restored, it now offers plush rooms and suites as part of the Airelles Château de Versailles Hotel. The parterre of the Orangerie, with its immaculate lawns and circular pool, is a daily source of inspiration for Aymeric and his team. And this Christmas, they have decided to pay homage to this part of the château with their Yule Log.
Inspired by one of the four lawns of the parterre, created by the legendary André Le Nôtre, the Yule Log “Les Jardins de l’Orangerie” is a wonder in itself. The dessert features a base of pistachio sponge, topped with a crispy pistachio praline and topped with a luscious pistachio cream. The intricate garden patterns are brought to life with an orange blossom mousse, offset by spaces of praline. This dessert is not only a treat for the palate, but also a visual delight that captures the essence of the grandeur that surrounds it.
Under the direction of Aymeric Pinard and the culinary genius of chef Stéphane Duchiron, the restaurant has reached new heights. Awarded a Michelin star in March 2022, it is a culinary destination par excellence, offering guests an immersive experience from breakfast to dinner. Nantes-born Aymeric, a prodigy in the world of pastry, has been honored by the Michelin Guide with the Passion Dessert award in both 2021 and 2022, a clear reflection of his dedication and skill in his craft.
The “Les Jardins de l’Orangerie” Yule Log, priced at €110, is available for a limited time only, ensuring exclusivity for those wishing to bring a piece of Versailles to their Christmas celebrations.
